They are built with special bricks that store the heat released by flames and then release this heat in an intense and consistent way.

A pizza in a brick oven is fed right onto the hot bricks. This floor of the oven contains “bottom heat” and it cooks the crust evenly. The “top” heat is created by the embers and flames. It is this heat that gives the crust and any toppings a golden brown finish.

Pizzas Cook More Evenly

Brick ovens, which are typically heated by wood fires, get hot evenly and hold heat extremely well. In conventional ovens, some spots are usually markedly warmer than others. Furthermore, because brick ovens are continually warmed by flames throughout the baking process, pizzas are able to cook evenly, so no areas end up more cooked than others.

Because brick ovens are very dense, and it is difficult for heat to escape, pizzas cook quite quickly; there is virtually no wait time between taking one pizza out and putting the next one in.
